Healthy Living: Crispy Fall Snacks

Pumpkin and candy seem to envelop us. Fall sweets can be found everywhere, and the many variations on fall treats seem so tempting. Splurge on these delicious, healthy, and easy recipes instead!
Zucchini Chips
These chips are addicting! Great on-the-go snacks that will keep you full. Be sure to slice them thin. Prep time is only about 10 minutes, with around 2 hours of cook time.

Ingredients:
One large zucchini
2 tbsp of olive oil
Salt to your taste
Directions:
1. Preheat the oven to 225F and line baking sheets with parchment paper.
2. Slice your zucchini (you can use a mandolin, I did not).
3. Take one paper towel, place zucchini slices on paper towel and put another paper towel on top.
4. Gently press slices to get all excess liquid out of them.
5. Put the slices on the baking sheet, and be careful not to overlap.
6. Brush olive oil onto chips, and sprinkle salt throughout sheet.
7. Bake for 2+ hours, until they aren’t soggy but are crisp.

pumpkin seeds

Roasted Pumpkin Seeds
A classic fall treat, these seeds are rich in fiber and you can have so much fun with the seasonings! Prep time about 5 minutes, cook time 45 minutes.

Ingredients:
1 ½ cups pumpkin seeds
2 tsp melted butter or olive oil
Salt, and any other seasonings. Some of my favorites are cayenne pepper, cajun seasoning, and garlic powder. You can do just about anything!

Directions:
1. Clean major chunks of pumpkin off of seeds.
2. Toss seeds with the butter or oil and seasoning you choose.
3. Spread seeds over baking sheet.
4. Bake for 45 minutes, or until golden brown.
